Course reflection

While the time passed in this semester, I regrets the past that I spent meaninglessly. Sometimes I’ve been really busy to do anything, but my major course projects.

However, the most classes were fun. It was very good to talk with classmates, because I barely not talk in class. 😦

So, first of all, I just want to say “Thank you” to Dr.Bhattacharya to giving me chance to be familiar with many people. Also, doing many different types of class works were fun to do. Especially, the debating class about topic was most exciting class.

I mean, I was prepared the nutrition chart for debating, but I was too much scared to talk in front of class. After my turn to speak, I barely not think to say sentence.

Also, in interviewing essay, it was very lucky to talk with my grandfather about Korean war that he experienced and how he eat during the war time. The one thing that I feel regret is my bad writing skills. I couldn’t fully write about his experiences and not focused on the topic well. As Dr.Bhattacharya said all the time of conferences and meeting, I should see her more for my writing.

Even now, I wasn’t focused on my last paper well to finish my projects. Sometimes, I hope the writing is same as computer programming.

Since, most classes were done, the final week is coming now. I just want to say thanks more for not having any exams in class or other stuffs for writing. I just hope all student can get good grades and enjoy rest of classes. I truly do.

At the end of class, I hope to say thanks for everybody, if I forgot about that I just want to say it here for everyone.

Geek’s recipe 3: The revolution in Taste!

Once, I considered about the new recipe, I wonder what kind of food that I suppose to choose.

It was hard and unending question. However, I once saw the TV show about my hometown’s food.

Isn’t it look’s great and tasty food to eat?? I hope you feel hungry when you see this picture of food. 🙂

Now, let’s see what is on the plate. I can see the pork is on left side of plate and Kimchi on the middle.

Then what do you think on the right side.

I will just tell you the answer. Basically, this food needs 3 different ingredients. Steamed pork, Kimchi, and

 this fish.

It’s English name is skate, it is one of species in ray.

Do you want to know how this   can turn into this ?

First of all, the hongeo samhap (simply samhap) needs to well grown Pork 2~3 lbs, soy source, some soju (Korean alcohol), onion,ginger, dried chili, bay leafs, and garlic.

However, cooking hongeo(cooked skate) and Kimchi is so hard for beginners, I just recommend to buy it from Korean market or visit South Korea. 😉

However, after boiling the water a while you need to put 2 big spoons of soy source, garlic to make soup.

Then you need to put pork in the soup for 6~10 minutes based on the amount of pork.

While the pork is boiling, you need to put the soju inside of soup so that it can bring more tastes and soften the pork.

Finally, put it out and slice in size of one bite.

Now put them in this order. Pork, Kimchi ,and hongeo.

That’s it.

Now try it and feel the taste is started from your nose, mouth, eyes, and stomach. The revolution will starts in your mouth.

Anyhow, I can guarantee that once you eat this food, then you will want to kill me for introduced this food. (Maybe?)

I found these two different articles to know what is going on with recycling food wastes. I’m very glad to see these articles to know specific projects for recycling food wastes are working. Through many people and nations, people started to know how much different kind of values in food. These events are very good example about how we can use food wastes for better purposes.

The first article is about how the recycling project is going on in Cleveland. Literally this article introduce us how Cleveland well organized, how this association produces benefits, and show us how the total outcome is both awesome and cool to everyone. Although the system requires very complex procedures to recycling many different types of food wastes. It wasn’t really working on many states in US, because of the price. However, in my opinion, the InSinkErator Inc’s system Grind2Energy is the closest outcome of efficiency and multiprocessing in recycling.

Second article is dealing with much larger size of recycling business. The comparison between one city in US and UK is proves that the recycling food wastes for a nation is now on adapting. Also, it shows that the requirements for adapting food waste recycling procedure in a nation very well. First of all, nation requires to put used food waste baskets for convenient places around all houses, shops, or factories. Second, collect them and put them in the grinder for convenience in recycling procedures. Finally, refine the result and classify liquid and solid materials. Then we can use solid materials for feeding stocks and liquid for the bio-fuel.

Cleveland is very successful example of recycling food waste as city size. Although the size is smaller than nation so they could build recycling organization in short time and stabilize the procedures. However, UK’s BigGreen project shows the money to maintain the beginning of the recycling project is significantly larger than city size.

I can’t imagine the more efficient ways to setup all the procedures for recycling food wastes. However, I also believes that this recycling project will change many nation’s current states and helps many people.

Reducing food wastes? Takes too long time

In past generations, US production rate is keep increasing. Especially in food production, the production rate of foods between 1980 and 2010 is drastically increasing. For example, the total grain production in 1980 was 233 million tons, but in 2010 the total production was exactly doubled. (EPI Food and agriculture) After 30 years later, people of 2010 consume twice or more than people of 1980.

Now, think about how many tons of food will waste from the increasing amount of foods. If your imagination can’t follow this question, I’ll help you to understand more. In 2012 there were 35 million tons food wastes were discarded and the population of US citizens in 2012 was 315 million. (MSW Fact 2012) Let’s do the simple math. First, divide 35 into 315 is  0.11 tons. Second one ton is 1000kg, so 110 kg per person. Finally, if your weight is 150 lbs then guess what? You consumed more than your own weight!

Isn’t it creepy?

Sadly, this increasion of food wastes is endless, unless all human suddenly turn into plant so that they can do photosynthesize. Now if you have enough time please watch this video.

If you watched it, then I hope you can understand the reason that we need to recycle food wastes. As the data proves, the production rate is keep increasing and also the food waste rate is keep increasing too. In this situation, even if some people try to reduce the food waste rate, but the increasing food waste rate is larger than the reduction rate.

If we can’t reduce the food waste rate drastically, then we have to change the view of watching this issue.

In previous post, I posted the recycling method of food waste, the biofuel. Largest, safest, and most adaptable technology to recycling food waste. If we can change the view of food waste, garbage to energy resource, then it will gives more profits to society.

However, if there are food supply then there will be also wasted food exist.  Particularly in U.S there are 30~40% percent of food supply is wasted. How do we can possible to use these wasted foods for better use?

Based on the food wastes per year, there are few suggestions about the recycling of wasted foods. One of them is converting wasted foods into biofuel for prevent future energy crisis. Even now few millions ton of wasted foods are dumped as trash and those foods are reproducing highly toxic materials to nature. Most wasted foods are being sent to the inflame section to burn with other type of trashes, but if we are using measured and nationally granted wasted food baskets or plastic bags to keep those wasted food as selected foods as material for reproducing different type of energies we can clearly help both nature and national wealth to produce better futures.

Mostly there are attempts to using peels of fruits like orange, banana, grape, or any other types of fruits with their peels are great resources to convert them into the natural resource based biofuel. Most of them are highly replaceable with current biofuel and easy to build their power plants to reproduce highly recyclable energy now. By the oils within these fruit peels they need few processes to reproduce biofuel in these future. However, these processes are containing serious problems, the dumping of wasted food in land. Indeed, if we can reply these technologies into future and recycling other 70 percent of wasted food as new resource of future then we can bring more bright future.

How the gender of cook is matter in cooking?

What makes the differences in professional cooking?

Today, many professional cooks are men, but there are also many number of female cooks are exist too.

However, even now, many people often have thinking about the professional chefs in famous restaurant are male.

Of course, those ideas are usually came from the TV cooking shows and other source of medias often broadcast about the famous male chefs. Then why the male chefs are dominating in restaurants? There are several reasons for this situation, but first of all many professional recipes are requires long time makes dough or need muscles for preparations to produce better taste. For example, before electric cookeries were invented, simple jobs like mixing flour and egg require much more time to make good dough.
Indeed professional cooking was only for male before 20th century. However, after the invention of electrical cookeries cooking became a study of sense and right timing. In addition, better design of food will be helpful to attract customers and gives more value on the food.

Now, then do we really need to care about the gender of chef or no need to care it for foods?
Thankfully there will be more specific value of determine the preference of cook. Nothing can be more accurate than this value. That value is your feeling!!
When you eat some foods and you will be directly influenced by the quality of foods and how your feeling changes by the design of foods. So trust your feeling that is all the answers for eatting

Show cases, what you will choose between organic and industrial foods

What makes differences between organic and industrial foods? How to cultivate the plants or what kind of chemical compounds are injected inside of foods? Generally most people are buying organic foods by the label on the products and nutrition table of foods on the back side of product. Ethically, people want to eat healthier and tasteful foods for general eating time. Moreover, it worth to take lesser time to eat and cook them. Anyhow, the requirements for this perfect food looks impossible to accomplish. How a food can fulfill these conditions at same times? Isn’t it an irony?

Commonly, fast food like hamburger, pizza, or fried chicken are accepted as main source to give more weight on people. However, we eat those foods for convenience of life and save more time to eat. As a same kind of reason, people dislike genetically modified organism like genetically modified wheat or animal meats. Instead of common organisms, GMOs are able to produce more fruits and foods than normal foods. Which can be helpful to people who are starving. Although the unawareness of nutrition inside of fast foods and GMO, people are blindly reject those foods.

What do you want to choose for your life. More time to finish jobs or healthy life. I think these ethics are based on the required time to cook or efficiency to cultivate. Yet, the answers to fulfill every people is not solved, but as expected answers the GMOs and industrial foods were appeared in 20th century. Until now, these answers are need to research more information and test to be proven. We are in the middle of the period to solve the irony of the ethics of foods. So, I think it is too early to decide which sides of answer is right or wrong, because there are too many answers to study and acceptable answer for each person in all different. Just be patience and open your mind to know more knowledge to decide answers in right time for your life.

Peru, the mysterious country in South America. There are bunch of strange foods and legends of Incan empire.

This show, Anthony Bourdain’s no reservation represents the whole new world of foods to his audiences.

The one best episode of ths show that I want you to know is the season 2 episode 3. The Peru episode.

There are so many fascinated ingredients and meals to cook by those ingredients.

Anthony Bourdain the famous food writer and honered chef of New York city has his own show to introduce many different kind of foods in different nations.

The cultural and social differences are always created the gap between two different world.

In ths episode, Bourdain introduced one Peruvian farmer. This man cultivate the vegetable like potato, it’s price is 50 cents per killogram, but in wegmans or different grocery we need to pay $6 to buy same food.

However, to picture this farmer, Bourdain entered to the Amazon and acrossed the Tambopata river.

He went to every local places of Peru to introduce every single piece of Peruvian foods to audiences.

If you see him in the jungle or any other extreme places to eat new foods in his show, then it means that food has worth to challenge to eat. Moreover, this Peru episode shows his eccentric nature to challenge new culture with foods.

His show is not only for introduce international foods for people who watching this show. It worth more cultural impacts on people.

Specifically, to the modern people in routine works need fresh air and new experiences for their healthy life, but most of them can’t go outside of their routine works for their survival.

While most people are frighten by unknown future, only few people choose to move outside and release  their stresses.

Do You Know Yorkshire pudding?- recipe 2

Hi, everyone long time no see.

It’s been a week after first posting.

Today, I’ll introduce you some traditional British recipe to you.

Fortunately, today’s recipe is not nasty or particularly strange, it is Yorkshire pudding.

The traditional British food that originated from England Yorkshire the place with natural beauty.

‘The God’s own county’ it is the nickname of Yorkshire.

Like the nature of this region this pudding only requires egg, milk, flour, salt, and oil to cook.

Also what we need to do for cook this pudding is simple,

Nevertheless, this Yorkshire pudding is much similar with bread unlike it’s name includes a word ‘pudding’.

When you eat this pudding, at first you will say “ahh.. it just a tasteless bread”.

this pudding designed to bake while meat roasted in oven.

Well, then let’s talk about first strange food that I ate from Philippine. The name of this food is balot

It was like an egg, a typical egg that we can usually find from grossary stores or inside of your refrigerator.

As many people knows, people can boil, bake, fry, or scramble eggs to cook, but this one wasn’t that much ordinary one as I thought before.

Do you know how long a chick hatch from a egg? And can you imagine why I talk about period of an egg’s hatch?

If you still not understand what am I talking about, please think about the reason that I talking about it.

Yees!!!!!! That boiled egg was a fertile egg, which means it would hatch after 3 weeks before it boiled.

Yeah~ I know it seem disgusting and it is totally disgusting to some people. (If you want to see it please google it)

However, do you know this? This food is national food in Philippine and many people enjoy it.

Do you think this is barbaric or uncivilized action? Well, this food doesn’t indicates the culture of Philippine is barbaric.

Philippine is developing country and they were in hunger for a while and some of them are still in trouble to eat something.

To them, buying meat allows to rich people and most of them are need some protein to live.
